5 Stir the icing sugar with the reserved lemon juice until smooth. If the mixture is too stiff, add 1 tablespoon of cold water. Pour the icing onto the centre of the pie and smooth with a large or palette knife. Allow the icing to harden.

Sweet yeast loaf

Preparation time: approx. 15 minutes (plus proving and baking time)

Makes 12 slices

For the dough

250 ml milk

500 g plain flour

20 g yeast

90 g sugar

100 g margarine

1 egg

salt

butter for the tin

1 Heat the milk. Sieve the flour into a large mixing bowl, form a hollow in the middle, into which crumble the yeast. Sprinkle with 1 teaspoon of sugar. Mix yeast with a little lukewarm milk and some flour from the edge of the bowl to form a thick mixture. Dust a little flour over it. Cover and allow the dough to prove for approx. 10 minutes in a warm place.
